Easy Cheesy Funeral Potatoes

You are going to love this easy, cheesy potato side dish.  These potatoes are a great side to any meal.

Course: Side Dish
Servings: 10 people
  • 28 oz. package frozen potatoes - or 3 cartons of Costco dried potatoes shredded or cubed
  • 1/2 cup melted butter
  • 1 1/2 cup sour cream
  • 1 cup cheddar cheese, and some extra to sprinkle on top
  • 1 10.5 oz can of cream of chicken soup
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 cup corn flakes or corn chex to sprinkle on top
  1. Grease a 9 x 13 casserole dish.  

  2. Preheat oven to 350 degrees Fahrenheit.

  3. If you are using Costco dried potatoes, add water to the fill line of 3 cartons. Let sit for 10 minutes.  After 10 minutes, drain excess water and potatoes are now ready for the next step.

  4. Combine all ingredients, except corn flakes.  Put mixture in the casserole dish. 

  5. Sprinkle cheese and corn flakes on top.

  6. Bake for 30 minutes.

Recipe Notes

*You can prepare these ahead of time, leave in the refrigerator until ready to bake.  Wait to sprinkle the corn flakes on until you are ready to bake.

* If you don't have corn flakes, you can use Ritz crackers, potato chips or corn Chex, to sprinkle on top.
