THE BEST CROCK POT HAWAIIAN HAYSTACKS

Hawaiian haystacks are the best, and my boys favorite dinner.  It is hard to find a meal that all my kids like and this is one of them.

Pile it on – The Best Hawaiian Haystacks

The base of Hawaiian haystacks is a pile of rice and a delicious creamy gravy, then you pile on toppings to your hearts desire. We like cheese, onions, slivered almonds, mandarin oranges, crunchy chew mien noodles and green bell peppers.  This is the easiest dinner you can image.  Just 4 ingredients in the crock pot.

Don’t you just love a crock pot?  Just set it and forget it.

Let the crock pot do it’s job for 4 hours on high or 8 hours on low.  When it’s ready, shred the chicken and that’s it.  To make things even easier, I use my food processor to shred my chicken.

Great for a week night dinner or to feed a crowd.

This is a great meal for any night of the week but it is also great when you need to feed a crowd.  You can put out the toppings and your crowd can customize their haystack just the way they like it.

 

THE BEST CROCK POT HAWAIIAN HAYSTACKS


Servings: 6 people
Ingredients
  • 1 28 ounce can cream of chicken soup
  • 1 8 ounce block of cream cheese
  • 2-3 frozen boneless, skinless chicken breasts
  • sprinkle of lemon pepper seasoning
  • cooked rice
  • toppings - cheese, crunchy chow mien noodles, slivered almonds, mandarin oranges, bell peppers, onions
Instructions
  1. In your crock pot, pour in your 28 ounce can of cream of chicken soup, block of cream cheese and frozen chicken breasts.  Sprinkle the lemon pepper over the top. 

  2. Cover and let cook for 4 hours on high or 8 hours on low.   Basically, when the chicken is shreddable, it's done.

  3. Shred chicken.  You can pulse chicken in a food processor or use 2 forks to shred your chicken.

  4. After you shred your chicken, put it back in the pot and stir.

  5. To assemble your haystack, start with a pile of rice, then some chicken gravy, then all the toppings you want. 

* The recipe calls for frozen chicken but you can use thawed chicken too, you just won't need to cook it as long.  They will be shredable in about 2 hours. 
* This gravy is good over mashed potatoes too.
